BBQ shredded chicken is a must have recipe this summer, the chicken is seared in a sweet, tangy BBQ rub then cooked in a smokey BBQ sauce.

Shredded BBQ Chicken is great as a starter, served with a lemon and chive potato salad, or you can pile this shredded Chicken in a burger bun as a great alternative to beef burgers.

Shredded BBQ Chicken

This recipe can be created in a number of ways, once the Chicken is cooked you can serve it as a whole chicken breast meal with Mashed Potato or even a cold Potato Salad. You don't have to shred it.

If you want to shred the chicken then that is how I meant this to be, so get yourself a couple of forks and rip that chicken up as much as you like, then mix it up with the delicious smokey BBQ sauce.

Chicken like this is perfect for piling into a burger bun and eating Al Fresco this Summer.

ingredients

2 - 3 Chicken breasts
30ml Olive Oil

Sauce:
120ml BBQ Sauce
25ml White Wine Vinigar or Cider Vinigar
25ml Worcestershire Sauce
1 tsp Smoked Paprika

Dry Rub:
30g of Light Brown Sugar
1/4 tsp Hot Chilli Powder
1/2 tsp Cumin Powder
1 tsp Lazy Garlic or Garlic Salt
1/2 tsp Smoked Paprika

Cooking Instructions

  1. Make up the dry seasoning in a small pot by adding all of the Dry Rub ingredients together then shaking it up (Put a lid on it first !)
  2. Decant the Dry Rub into a small plastic container, then get the Chicken breasts on top of the rub and fully coat them all over. Make sure you use up all of the seasoning. You can let this stand for up to an hour if you like.
  3. In a separate pot make up the BBQ sauce by combining all of the Sauce ingredients and mixing it together well.
  4. Get a large pan or wok on the stove, add a splash (30ml) of olive oil and get this hot. When the oil is hot tip the Chicken in straight from the container so that all of the seasoning goes in to the pan.
  5. Cook the Chickens for 8-12 minutes, turning them a few times to get them brown and sealed all over.
  6. Tip in the BBQ sauce and fully coat all of the Chicken.
  7. If you are using a cast iron oven dish then you can just put this directly into the oven and cook @ 180c for 15 minutes so that the chicken reaches a temperature of around 75c.
  8. If you need to you can transfer this into a small oven dish to cook it.
  9. When the Chicken is cooked, remove it from the oven and let it cool for 5 minutes, then using a couple of forks rip the chicken up in the sauce, until you get it shredded as much as you like.

Chefs Tips

Once the chicken breast is cooked you can do what ever you like with it, you can Shred it as I have to make it Shredded BBQ Chicken meat, or you could serve the Chicken breasts whole as a meal.


Variations
I have used white wine vinegar in this recipe, but I would recomend trying other types. Apple Cider or Balsamic Vinegar are good. Vinegar 💬
