Mini Chicken Kiev's

Cowbridge Kitchen

If you have ever tried a Chicken Kiev then you will love our Savoury Chicken bites, they are 100 percent chicken breast stuffed with cream cheese and coated in breadcrumbs.

These mini Chicken Kiev's are a tasty snack that can be added to any buffet menu or party food, of course these are not exactly Kiev's they are more Cordon bleu as they are stuffed with Chees and not Garlic Butter.

I like to dip these in some Homemade Mayonnaise or sweet chilli dip.

    Savoury Chicken Bites

These are little savoury chicken appetizers made from ground chicken and Swiss Cheese.

Savoury Chicken bites are classic buffet food, they are easy to make and easy to eat. These little chicken bites are similar to Chicken Kievs, but on a smalles scale.

The good thing about this recipe is that you can use any cheese you like for it, so feel free to change it up a bit for your favourite cheese.

35 g of Diced Cooked Ham
    70 g Bread Crumbs
    1 egg
    230 g Swiss Cheese
    Oil

    Cooking Instructions

    1. Dice up the chicken breasts.
    2. Set up your Meat mincer as per manufacturers instructions.
    3. Grind up all of the Chicken.
    4. Its a good idea to run a slice of bread through the grinder in order to get the last of the chicken out.
    5. Slice up the cooked ham and add it to the chicken mince.
    6. Add an egg to the mince and mix together with a fork.
    7. Start adding the bread crumbs until the meat it not moist.
    8. cut the cheese into 1/2 inch cubes , about 20 cubes.
    9. Heat a pan of vegetable oil to 180 c.
    10. While the oil is heating , it is time to form the chicken bites.
    11. With slightly wet hands, make a flat pate of mince and put a cube of cheese in the centre.
    12. Form the meat around the cheese and roll into a ball.
    13. Do this until all of the meat is used.
    14. When the oil is hot , take a slotted spoon and place about 5 or 6 of the balls into the oil and fry for about 4 minutes or until golden brown.
    15. Remove the balls from the oil and drain on kitchen roll.
    16. Cook all of the Chicken Bites this way.
    17. Place the Chicken Bites on an oven tray and cook in a preheated oven @ 180 c for about 10 minutes.
