Chicken fried rice is a quick and easy meal to make, packed with tender chicken, peas and other vegetables.

Sometimes called Special fried rice, this rice is the perfect accompaniment to any Chinese Meal. If you wanted to make this more of a special fried rice then the addition of seafood such as prawns can be added along with a splash of Oyster Sauce.

This rice works with anything or even served on its own with some Curry Sauce.

How to Make Special Fried Rice

Special fried rice or Chicken fried rice is a Chinese takeaway rice and a meal in one. The rice can be cooked with any vegetables, sea food or meat you like.

The special fried rice recipe here is made with left over chicken and sliced vegetables.

Fried rice is so versitile that you can make almost anything into a fried rice dish, so once you have mastered this recipe then you can make any type of fried rice you like.

ingredients

To Cook The Rice
110 g uncooked basmati rice
Water
Salt

To Make The Dish
Cooked Rice
25 g Chopped Spring Onions
25 g Cooked Peas
25 g Sliced Carrots
25 g Chopped Onions
10 ml of light soy Sauce
25 ml olive Oil
25 g Cooked Ripped Chicken
10 g Chopped Chives

Cooking Instructions

  1. Put the rice into the boiling salted water.
  2. Bring to the boil
  3. Then simmer for about 10 minutes , until the rice is Al Dante
  4. Put the rice pan in the sink , and run under cold water until the rice is cold.
  5. Drain in a colander until dry (about an hour)
  6. Turn occasionally with a fork.
  7. Refrigerate for a few hours. (optional)
  8. Heat the oil in a frying pan or Wok
  9. Fry the peas, Carrots, and Onions for a few minutes.
  10. Add the ripped chicken , cover and cook for a 3 - 4 minutes
  11. Add the cold rice and stir fry it all together for 10 minutes.
  12. Mix in the soy sauce and mix together with a fork
  13. Cook for a further few minutes turning with a slotted spoon until all of the ingredients are hot.
  14. Mix in the chives.
