Chicken Gyros

Chicken Gyros is a chicken recipe from the Mediterranean. It is a simple marinated chicken served in a pita bread. The perfect Greek sandwich traditionally served with olives and cherry tomato salad with Fetta Cheese in a pita bread.

I like to serve these Gyros with either Couscous or Mushroom Fried Rice, perfect as a light Al Fresco summer dish.

How to Make Chicken Gyros Sandwich

Gyros in some regions, chiefly North America, anglicized as a gyro —is a food item of Greek origin made from meat cooked on a vertical rotisserie and served wrapped or stuffed in pita bread, along with ingredients such as tomato, onion, fried potatoes, and tzatziki.

In Greece, it is normally made with pork or sometimes with chicken, whilst beef and lamb are also used in other countries.

ingredients

The Marinade

1 tbs Ground Coriander
1 tsp Chopped Garlic
2 tbs Smoked Paprika
1/4 tsp Chilli Flakes
1 tbs Dry Dill
1/4 tsp Black Pepper
75 ml of Extra Virgin Oil
1 tbs (15 ml) Red Wine Vinegar
1 tbs Lemon juice
Salt

Cooking Instructions

  1. To make the marinade you are going to need to put all of the dry ingredients into a bowl.
  2. Add the extra virgin olive oil and the lemon juice and mix it into a thin paste.
  3. Add the diced up chicken and mix it well into the paste.
  4. Leave the chicken to sit in the marinade for a minimum of an hour , you can leave it overnight if you like, it will have a much better flavour then.
  5. Add a little extra virgin olive oil to a frying pan and heat up.
  6. Place the chicken pieces one by one into the pan so that they start to cook on contact. Tip in the remaining marinade as well.
  7. Cook for about 10 minutes turning the chicken a few times to get an even cook.
  8. When the Chicken is nice and brown and fully cooked tip it into an oven proof dish and place it in a medium oven to keep warm while you make up your Greek Salad.
  9. This Greek Chicken dish is best served in a pita bread with salad and Tzatziki Sauce.
